PEANUT CHICKEN
1 medium head cauliflower
1 large head broccoli4 large chicken breasts cut into 1-inch cubes
1 tablespoon sesame oil
2 tablespoons soy sauce
1 large diced onion
½ cup sliced carrots
2 chicken bouillon cubes dissolved in ½ cup water
2 tablespoons brown sugar
¾ cup peanut butter creamy or chunky
1 tablespoon cornstarch dissolved in water
¼ cup roasted peanuts
¼ cup cashews
Cut broccoli and cauliflower into 1-2 inch, bite size pieces and steam in microwave for 6 minutes or until tender crisp.
Brown chicken in soy and sesame oil. If the chicken is browned, it holds in the flavor better.
Add diced onion, sliced carrots, and chicken bouillon and saute’ until chicken is done.
When the chicken has cooked through, add peanut butter, brown sugar and cornstarch to thicken the sauce.
Once the sauce has thickened, add the steamed broccoli and cauliflower and top with roasted peanuts and cashews.
Serve over rice or thin spaghetti. Serves 8.

- Peanut Chicken is a quick family-friendly dish, a one-skillet meal, takes
30 minutes to make, and the the kids love it!
- If the kids aren’t nuts about nuts, leave them off...theirs!
