HAM LOAF
Mix:
1 cup milk
1 cup dry bread crumbs or finely crushed crackers
2 slightly beaten eggs
2 lbs. ground ham (smoked, not fresh)
1 ½ lbs. ground fresh pork
1 tsp. dry mustard
Shape into two loaves. Bake at 350 degrees for 1 ½ hours.
Baste occasionally with brown sugar glaze.
Sauce:
3/4 cup brown sugar
1/4 cup water
1/4 cup vinegar
2 tsp. dry mustard
Notes:
-For the holidays, serve garnished with a can of cherry pie filling! Just
heat pie filling with a ½ tsp. of cinnamon or 1/4 tsp. of allspice! Spoon
around the edge of serving plate.
-I make two loaves, put them side by side in a 9 X 13" pan.
-These freeze very well, so do plan to make them ahead.
-I tell the meat man in the store what I want and what for, and he grinds the
meat and mixes it together for me. You can buy ground fresh pork in the meat
counter, ground ham is harder to find.
-Makes great meatballs too!
