Baked Chicken Rolls with Cheese
4 boneless, skinless chicken breasts (about 1 pound)
4 ounces of muenster cheese, cut into ½ X 4" long sticks.
In a shallow bowl or pie plate mix:
1 cup fresh white bread crumbs
1/3 cup grated Romano cheese
1 ½ tsp. paprika
1 ½ tsp. dried thyme, crumbled
In shallow bowl or pie plate:
Olive oil
Preheat oven to 400 degrees.
Lightly grease a small baking sheet.
Rinse chicken breasts and pat dry.
Place chicken between two sheets of wax paper and pound to 1/4" thickness using
a mallot or rolling pin.
Season chicken with salt and pepper.
Place one stick of cheese at short end of chicken breast, roll up chicken to
enclose cheese.
Brush chicken with olive oil.
Roll chicken in crumbs, pressing lightly to coat.
Place, seam side down, on baking sheet.
Bake, uncovered, until cooked through and coating is crisp
.
20 to 30 minutes, depending on oven and size of chicken pieces.
Serves 4.
