Seven Layer Casserole

Prep time 15 min!

In order, in a buttered 1 1/2 quart casserole dish, layer:

1 cup uncooked rice, washed & drained
1 cup whole kernel corn, drained
dash salt & pepper
1 can (8 ounces) tomato sauce & 1/2 cup water
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3/4 to 1 pound extra lean ground beef, uncooked, broken up
dash salt & pepper
1 can (14.5 ounces) diced tomatoes, undrained
4 strips bacon, cut in half
shredded cheese, if desired for topping

Cover & bake at 350 degrees for 1 hour.
Uncover & bake 30 minutes longer, until bacon is crisp.

Seven Layer Casserole serves 4.

Suzanne’s notes: I used a 9 x 13 pan and used slightly larger amounts of ingredients to serve my family of 5. I thought this recipe was nuts for calling for uncooked beef & rice - It worked!!! The meat and rice were fully cooked and the rice was moist.
