| Romaine-Blueberry Salad |
Family-friendly food from Terri |
1 head (8 cups) romaine lettuce, washed and torn into bite size pieces
1 cup fresh blueberries, strawberries or mandarin oranges
1/2 cup chopped or thinly sliced vidalia or purple onion
1/3 cup sliced or slivered almonds, or chopped pecans
1/4 cup sunflower seeds
1 cup shredded monterey jack or mozzarella cheese
Dressing:
1/3 cup red wine vinegar -or your favorite salad vinegar
1 tsp. salt
1/4 cup sugar
3/4 cup vegetable oil
1 1/2 Tblsp. poppy seeds
1 tsp. dry mustard
Place all dressing ingredients in a jar.
Cover and shake until blended.
Just before serving, drizzle poppy seed dressing over salad.
Toss.
*Notes:
Strawberries, blueberries, the white cheese, makes it a perfect patriotic salad!
Top with chunks of chilled, grilled chicken, and make it a summer supper.
