MEXICAN HOT DISH
from the kitchen of Angie Webster
1 lb. ground meat (Angie uses ground turkey, lean ground beef works great!)
1-2 cloves fresh garlic, crushed
1 can Chili Beans (with sauce)
12 oz. jar of salsa
1/2 cup - 1 cup Minute Rice
Fritos or Tortilla Chips
Shredded Cheddar Cheese
Sour Cream
Brown meat in a frying pan. Add garlic.
Once meat is browned, add salsa, chili beans & rice. (Angie says, I don't measure the rice, just whatever looks right)
Cook over medium heat until rice is done.
Once it's cooked, remove from heat, sprinkle with cheddar cheese, cover until is cheese melted.
Serve with chips & sour cream, a little more salsa or some fresh tomatoes!
* Notes:
- This is a great stove top dish. Can be saved and served out of a crock pot on “low” . . . watch it, it gets brown easily.
- I cook it and refrigerate. As needed, a single serving heats well in the microwave and is a great way to keep the family fed as they run in and out.
