| Light Strawberry Spinach Salad |

12 cups/1 lb. spinach leaves - washed, with stems removed
2 cups sliced strawberries
2-11 oz. cans mandarin oranges, drained
½ cup sliced green onions
¼ pine nuts or ½ cup pecans
Orange Honey dressing
¼ cup honey
¼ cup orange juice
2 Tblsp. vegetable oil
2 Tblsp. Dijon mustard
Be sure the spinach is well rinsed and dried. I put it in a big Tupperware bowl with a paper towel on the top and store it sealed, upside down, in the refrigerator to keep it crisp.
Wash, hull, and drain the strawberries. Slice.
Mix dressing ingredients in a jar and shake to combine refrigerate.
Last minute. In a BIG bowl, combine the spinach, chopped onions, strawberries, oranges, and nuts.
Pour the dressing over the salad when ready to serve or the spinach will be limp.
